Sauce Gombo (Okra Stew)
Serves 6-8
INGREDIENTS:
1 pound hamburger (500 g)
1 large onion, chopped
1 clove garlic, minced
4 cups cooked tomatoes or tomato sauce (1Liter)
2 cups fresh or frozen okra, chopped. (500 ml)
1 teaspoon salt (5ml)
1 teaspoon crushed red pepper (5ml)
1 teaspoon chili powder (5ml)
2 cups fresh or frozen spinach, or other dark greens, chopped
Cooked rice for serving
INSTRUCTIONS:
1. Brown the hamburger. Add the onion and garlic and cook until soft.
2. Add the tomatoes or tomato sauce, okra, salt, red pepper, and chili powder. Simmer 20 minutes.
3. Add the spinach or other dark greens and simmer 5 minutes more.
4. Serve over rice.
